How Fern is Prepared in Sakhalin

As many know, Sakhalin Island abounds with various edible wild plants, and right now, its residents are just beginning to venture into the forests in search of fern, burdock, and wild herbs. These plants are best harvested from late May throughout June.

Residents of many regions across the country cannot imagine that fern in Sakhalin is a common food. For those who have only seen this plant served ready-made at Korean restaurants or preserved in stores, we'll tell you more about how to collect and prepare it.

There's no need to be confused or afraid. Some people are accustomed to seeing fern as thin, long grassy stems with leaves tightly coiled into spirals at the tips. Others remember the plant as having broad leaves resembling large wings. The truth is, these coiled fiddleheads unfurl and open up in about two to three weeks.

Fern must be harvested precisely when the leaf spirals at the top of the stem have begun preparing to open but are still in a tightly coiled state — in Sakhalin, this is late May to early June. Under no circumstances should you collect fern when the leaves have already unfurled.

Sakhalin has plenty of fern, so you won't have to search for long. In just one day in any forest in the southern part of the island, you can gather quite a few of these stems and begin cooking them the same day. The fern can also be dried by spreading it out in the sun. For those who don't wish to preserve it for later, you must first soak the fern in salted water. This should be done by constantly changing the water until it no longer turns dark.

The Simplest and Most Delicious Fern Recipe
First, slice the onion into half-rings and fry it in oil in a pan. Add the water-soaked fern and cook for 10 minutes. It should reduce in volume by approximately half.
After that, add finely chopped garlic, soy sauce, red and black pepper, and monosodium glutamate. Mix everything thoroughly and fry for another five minutes. In reality, everyone can add other ingredients to the fern according to their taste. It should be served cold.
