Fern must be harvested precisely when the leaf spirals at the top of the stem have begun preparing to open but are still in a tightly coiled state — in Sakhalin, this is late May to early June. Under no circumstances should you collect fern when the leaves have already unfurled.

The fern can also be dried by spreading it out in the sun. For those who don't wish to preserve it for later, you must first soak the fern in salted water. This should be done by constantly changing the water until it no longer turns dark.
The Simplest and Most Delicious Fern Recipe
First, slice the onion into half-rings and fry it in oil in a pan. Add the water-soaked fern and cook for 10 minutes. It should reduce in volume by approximately half.
After that, add finely chopped garlic, soy sauce, red and black pepper, and monosodium glutamate. Mix everything thoroughly and fry for another five minutes. In reality, everyone can add other ingredients to the fern according to their taste. It should be served cold.
